Mint Mocha Panettone Recipe

1½ tsp yeast
400g strong white flour
2 tbsp sugar
1 tsp salt
50g cold butter cut into cubes
2 medium eggs beaten
60ml mocha cooled (1 tbsp coffee + 1 tbsp drinking chocolate, 60mls boiling water)
1 tsp peppermint extract
140ml milk
On the beep add
70g cold butter cut into cubes from the fridge
75g dark mint chocolate chunks

Steps

Put ingredients in the bread pan in the order listed or put the yeast in the yeast dispenser if you have one.

Add the 70g butter and dark chocolate later when the beep sounds. Do not put in the raisin nut dispenser.

Set the breadmaker to the brioche program 3hours 30 mins, light crust.
