Adjust Servings:
1 aubergine sliced
1 onion sliced
30ml olive oil
1 clove of garlic peeled and crushed
1 courgette sliced
1 green pepper deseeded and sliced
400g canned chopped tomatoes
15ml mixed herbs
salt to taste
pepper to taste

Steps

Take the water tank out of the combi steam oven, fill it with water and place it back into the oven.

Combine all ingredients in Pyrex® casserole dish. Cover, place on base of the oven and cook on Combi 1 for 20-25 minutes or until vegetables are soft. Stir halfway through cooking time.
