Ingredients

Adjust Servings:
250g block halloumi halved lengthwise
50g plain flour
1 egg beaten
60g crushed cornflakes
1 tbsp sesame seeds
salt and pepper
olive oil spray
for the green slaw
100g green cabbage finely shredded
100g purple cabbage finely shredded
1/2 cucumber thinly sliced or julienned
2 spring onions finely sliced
juice of 1/2 lemon
1 tbsp olive oil
salt and pepper
For the lemon chilli honey
2 tbsp runny honey
1 tsp lemon zest
1 tbsp lemon juice
1 red chilli finely chopped

Steps

1

Place the halved halloumi in hot water for 1 minute to soften, then remove and pat dry. Roll each piece gently between two sheets of baking paper using a rolling pin until about 3 mm thick.

2

Set up three bowls: one with flour, one with beaten egg, and one with crushed cornflakes mixed with sesame seeds. Season the flour with salt and pepper.

3

Dredge each halloumi piece in flour, dip into the egg, then coat in the cornflake mixture, pressing to adhere.

4

Preheat the Panasonic Combi Oven NN-CD88 on the Combi Air Fry setting at 220°C. Place the coated halloumi schnitzels into the air frying basket, placed on the wire rack and spray lightly with olive oil. Air fry for 12–15 minutes until golden and crisp, turning halfway through.

5

Meanwhile, toss the green cabbage, purple cabbage, cucumber, and spring onions in a bowl with lemon juice, olive oil, salt, and pepper. Let sit to slightly soften.

6

In a small bowl, stir together the honey, lemon zest, lemon juice, and chopped red chilli to make the dipping sauce.

7

Serve the crispy halloumi schnitzels alongside the slaw, with lemon chilli honey drizzled over or served on the side.

Enjoy
