Chocolate Cheesecake with Fresh Berries Recipe

When you crave something sweet and you don’t have much time, the answer is a delicious chocolate cheesecake. This dessert recipe is incredibly easy to prepare – try our cheesecake version with fresh berries and chocolate!

Ingredients

Adjust Servings:
100g butter
250g digestive biscuits crushed
150g plain chocolate + some extra for the topping
30ml milk
450g cream cheese
100g soft brown sugar
2 large eggs
1 tbsp vanilla essence
2 or 3 fresh mint springs
80g mixed wild berries (fresh rasperries, blueberries, red currant...)
40g chocolate chips (black or white, as you prefer)

Steps

Place the butter in a medium microwave-safe bowl on the base of the oven and melt it using HIGH MICROWAVE programme for 40-50 seconds. Stir in the biscuits and press them into the base of the flan dish.

In another medium microwave-safe bowl, melt chocolate with milk on the base of the oven for 1-2 minutes using MEDIUM MICROWAVE (400W). Leave to cool slightly.

Preheat your Oven to 150°C (select 150°C and press start to preheat).

Mix all the remaining ingredients and stir in the chocolate. Pour the mixture over the biscuit base.

Place the flan dish on the tray in the lower shelf position and bake at 150 °C for 40-45 minutes.

Chill before garnishing. Cover the cake surface with some extra melted chocolate and spread the fruits and the chocolate drops on it.
