Steamed Courgettes with Crunchy Cheese and Pine Nuts Topping Recipe

Healthy, vegetarian and easy to prepare, these steamed and grilled courgettes with a flavourful topping are a delicious and meatless alternative for your next dinner.

2 courgettes
2 tbsp extra virgin olive oil
For the filling:
30g breadcrumbs
20g pine nuts
3 spring onions finely chopped
1 clove of garlic crushed
1 tbsp dried thyme
20g parmesan grated

Steps

Fill the water tank with fresh water.

Cut the courgettes in half and place them on the grill tray in the upper shelf position, with the white side facing up. Select the AUTO STEAM FRESH VEGETABLE PROGRAMME and cook the courgettes.

Turn the courgettes and sprinkle them with oil. Select the GRILL 1 programme and cook them for 5 minutes, or until grilled.

Mix olive oil, breadcrumbs, pine nuts, spring onions, garlic, thyme and parmesan together in a small bowl.

Add the mixture onto the courgettes and drizzle them with the remaining olive oil.

Select the OVEN function, preheat to 200° and cook the courgettes on the grill tray in the lower shelf position for 10-15 minutes at 200° or until golden.
