Ingredients

For 4 Burger Patties
200g edamame soy
4g dry mixed algae
40g potato flakes
25g water
sea salt
FOR 4 BUNS
200g strong wheat flour
130g water
80g sourdough starter
4g fine sea salt
5g activated charcoal
sesame seeds
FOR THE SAUCE
1 avocado
sea salt
lemon juice
tabasco
black pepper

NOTE: the recipe ingredient amounts are not suitable for the Mini Breadmaker SD-PN100

Steps

To make the burger bun dough:
Add all the ingredients for the buns into the bread pan of your breadmaker SD-ZX2522 and start program 29 (rustic sourdough). (Tip: If you use another Panasonic breadmaker, just choose a program that has a long kneading and rising time and stop the program before the baking starts.) Take out the dough once the dough program finishes.

To make the edamame patties:
Blend the edamame with a hand blender. Then add the rest of the burger patty ingredients and stir by hand.

Shape the burger patties:
Shape the burger patties with a cutter or with an 8 cm diameter ring.

Prepare the avocado sauce:
Prepare the avocado sauce by blending all the sauce ingredients with a hand blender or high-power blender.

Folding the dough:
Transfer the dough into a baking dish and start folding it.
(3 rounds of folding, 20 minutes apart)

Final fermentation of the dough:
Leave the dough in the baking dish for another 2 hours at room temperature before shaping it.

Dividing the dough:
Set the dough on the floured countertop and divide the dough into 4.

Forming the buns:
Proceed to fold the dough inward to form balls and then place them onto the glass baking tray lined with floured parchment paper.

Last rising phase:
Brush the dough with warm water and sprinkle with white sesame seeds.
Put the pan in the oven so it can rise another 2 hours.

Baking the black buns:
Bake the buns in a Panasonic Steam Combi Oven by using Steam + Convection (Steam at maximum and convection temperature at 180°C). Bake for around 40 minutes or longer, as you prefer.
Remove them from the steam oven and let them cool down on a wire rack.

Prepare the burger by cutting the bun in half, spreading it with some avocado sauce, adding salad and a slice of tomato as well as the edamame patty and some sprouts. Add the other half of the bun on top and you can enjoy your freshly made edamame burger!
