Recipe for a bread loaf with rolled oats and for an easy veggie spread with sweet potato, mushrooms and hummus.

Ingredients

FOR THE BREAD
1 tsp dry yeast
400g pastry flour
10g butter
1/2 tsp sugar
1 3/4 tsp fine salt
290ml water
4 tbsp rolled oats
FOR THE VEGGIE SPREAD
1 big sweet potato
a dozen mushrooms
a cup of hummus
some flat parsley leaves
salt
pepper
a dash of olive oil

Making and Baking the bread

Put all the ingredients except the rolled oats into the bread pan of the Croustina breadmaker in the order indicated. Select menu 3 and press start. When the breadmaker beeps, add half the rolled oats. Close the lid again and press “start” to continue.
An hour before the end of the programme, sprinkle the remaining rolled oats on the bread. Immediately close the lid and let the breadmaker continue its programme.
Take the bread out of the pan and leave to cool.

For the veggie spread

Preheat the oven to 210 degrees.
Peel the sweet potato and cut into cubes. Put the cubes on a baking tray. Season with salt and pepper. Drizzle with olive oil, mix and roast for 25 minutes.
Heat a pan with a little oil, cut the mushrooms in half and brown for a few seconds. Season with salt and pepper.
Quickly put the slices of bread in the toaster. Spread with hummus and garnish with the roasted sweet potato and mushrooms. Chop the parsley and sprinkle over the vegetables. Serve immediately.
