Adjust Servings:
225g gluten-free flour
15ml (1tbsp.) gluten-free baking powder
5ml (1tsp.) xanthan gum
3ml (1/2 tsp.) salt
75g butter
100g caster sugar
3 medium bananas mashed
2 eggs
50g sultanas

Steps

Sieve flour, baking powder, xanthan gum and salt into a bowl.

Rub the butter into the flour until it resembles fine breadcrumbs.

Stir in the sugar, bananas and the beaten egg, mix well.

Remove the kneading blade from the bread pan and line the bottom of the pan with greaseproof or baking paper.

Place the mixture in the bread pan.

Select the bake mode and enter in 50 mins on the timer.

Test with a skewer to see if the centre is cooked. If not select the bake mode again and enter a further 5 mins. on the timer. Allow to rest for 5 mins. in the bread bakery.

Take the bread pan out of the bread bakery using oven gloves and leave to stand for another 5 mins. before removing and allowing to cool.
