FOR THE DOUGH
1 tsp dried baking yeast
400g wheat flour
50g potato puree
4 tbsp olive oil
2 tsp salt
240ml water
FOR DECORATION
2 tbsp olive oil
2 tsp water
a few pinches o fleur de sel
peppers
Fresh herbs: rosemary, thyme, etc.
red onion
TO SERVE
6 tomatoes
2 burrata
1 jar of pesto genovese
capers
olive oil
salt
pepper

Steps

Make the dough: place the ingredients into the baking pan of your Panasonic breadmaker in the order indicated. Start the pizza dough programme.

When the dough is ready, roll it out so it becomes rectangular in shape and fits onto a lined baking tray. Put some fresh herbs on it to visualise the focaccia decoration. Press lightly to mark the dough and then remove them.

Mix together 2 tablespoons of olive oil and two tablespoons of water. Brush the dough with it and form small holes with your fingers. Add the decorative elements: herbs, chopped vegetables, etc. Sprinkle with a little salt and set aside for 30 minutes.

Place the tray into the pre-heated oven at 190°C and bake it for 25 minutes. Leave the focaccia to cool on a wire rack and then cut into pieces.

Serve with pesto, burrata, sliced tomatoes and capers depending on your taste. Drizzle with a dash of olive oil and season with salt and pepper. Serve immediately.
