20g fresh yeast
250ml lukewarm milk
440g gluten-free bread flour
60g potato starch
10g salt
60g brown sugar
2 eggs
100g butter
1 egg yolk and a little milk for the wash
seeds

Steps

Dilute the yeast in warm milk (around 25°C).

Put the diluted yeast and milk in the bread tin and then add the rest of the ingredients in the order indicated. Select the bread dough programme.

At the end of the programme, take out the dough, press it down with your fist and divide the dough into 6 to 8 equal parts to form small rolls. Place them on a lined baking tray, leaving enough space between each one, cover with a damp tea towel and leave to rise for 1 hour, ideally in an oven at less than 30°C.

After the dough has risen, brush them with an egg wash and sprinkle a few seeds on top.

Preheat the oven to 180°C and bake until they're golden brown (around 15-20 minutes).
