Mediterranean veggies, so tender and tasty! With sweet hints from onion, lightness from zucchini, heartiness from eggplant and acidic balance from tomato, you just need to add some basil and oregano to get an amazing veggie based dish. You can use this stew along with some white fish, or chicken, or even as a pasta sauce!

Steps

Cut the cherry tomatoes in half. Chop zucchinis and eggplant. Finely slice the onion.

Add veggies to the Steam+ Pot of the grill microwave oven, add salt, oregano and olive oil and cook on COMBI 1 (440W + High Grill Level) for 5 minutes.

Add tomato paste and basil, cover with the lid and cook on microwave at 1000W for 8 minutes.

Use it as a side dish, serve with protein of choice or use it as a pasta sauce.
