Adjust Servings:
6 scallops
300g floury potatoes
1 tbsp peas
25g butter
150ml milk
1 tbsp olive oil
1 tbsp orange-yuzu jam
1 tbsp orange juice
salt
pepper
some dill sprigs

Steps

Peel the potatoes and cut into slices. Place on the glass tray. Season with salt. Select Steam programme 1 on the steam combi oven for 19 minutes.

Mash the potatoes with a potato masher or fork. Add the milk and butter and season with salt and pepper. Keep warm.

Wash the scallops and place on the glass tray. Add the peas. Season with salt. Select Steam mode 1 for 6 minutes.

Meanwhile, mix the orange-yuzu jam with the orange juice and olive oil. Season with pepper and set aside.

Put some mashed potato on each plate, divide the scallops and peas between them. Glaze the scallops with the sauce, sprinkle with dill and serve.
