A nice and easy spelt sourdough loaf which is unashamedly tasty and guaranteed to turn out perfectly. We want to show you just how quickly you can bake it in all Panasonic breadmakers.

FOR THE SOURDOUGH
75g sourdough starter
75g spelt flour type 630
75ml water
FOR THE MAIN DOUGH
425g spelt flour type 630
12g salt
250ml water lukewarm: 28°C

Steps

Mix the ingredients for the sourdough together until they form a smooth dough. Cover and leave the dough in a warm place for 2 hours.

Add all the ingredients into the pan of the breadmaker and knead on program 28 (for SD-ZB2512) or program 1 (for Croustina) for 10 minutes. Then cancel the program.

Select program 9 (for SD-ZB2512) or program 6 (for Croustina) and press start.

Optional: If you want, you can score your sourdough to give it a beautiful looking crust and help your bread to expand. The best time to cut your dough is around 1 hour before the end of the program (that’s right before the baking starts). Prepare your dough by coating it with flour, using a fine-mesh sieve. Then you take a sharp blade (e.g. a lame) and cut your dough for example once or even twice (ideally in a 45° angle). Just be careful not to scratch your bread pan.

Remove the loaf from the bread maker and allow to cool fully before slicing.
