Rye Sourdough Bread with Bacon & Pepper Recipe

120g streaky bacon
1 1/2 tsp colourful peppercorns
1 tbsp dry yeast
500g rye flour type 1150
1 tsp salt
1 tbsp sugar
20g butter
1 packet sour dough e.g. Seitenbacher, approx. 75g
340ml water

Steps

Open the Panasonic Breadmaker, remove the baking tin and insert the dough hook into the provided shaft.

Dice the bacon roughly and leave to crisp in a pan without oil. Fill peppercorns into a spice mill and grind finely. Then fill ingredients into the baking tin in the following order: Dried yeast, flour, salt, sugar, pepper, butter, sour dough, bacon and water.

Insert the baking tin into the Breadmaker and close the lid. Select the Rye programme on your breadmaker and press the start button. Remove the bread from the machine once the programme finished, allow to cool slightly and turn out on a grid.
