Everybody knows Quiche Lorraine is a classic dish and now it is even easier to make! Let your Microwave Oven do all the work for you.

Adjust Servings:
225g shortcrust pastry
1 chopped medium onion
1 tbsp oil
6 rashers, streaky bacon Or alternatively use 100 g of ham cut into strips
6 sliced mushrooms
2 eggs
150ml single cream
salt
black pepper
50g cheddar cheese
2 sliced tomatoes

Roll the pastry out, line the flan dish and allow to chill for 15 minutes. Line the base of the pastry with grease-proof paper and top with baking beans or dried pulses. Cook the pastry on Convection 190°C for 10 minutes, uncover and continue for a further 10 minutes.

Place the onion, bacon and mushrooms in a bowl, cover and cook on High power for 2 minutes. Stir and cook for a further 2 minutes On high power. Drain the sieve and place in the bottom of the flan case.

Beat the eggs, single cream, salt and pepper before pouring over the bacon mix. Sprinkle with cheese and arrange sliced tomatoes on top. Cook on Combination 190°C + Warm power for 20-25 minutes.
