Steps

1

Start by removing the skin of lupini beans. Rinse them under cold water and dry them with a towel or some paper.

2

Placed hulled lupini beans, sliced zucchini, parsley and thyme in the food processor and mix them using M1 mode until everything is going to be chopped and mixed together.

3

Add ground flax, nutritional yeast, chopped spring onions and spices to the lupini beans mixture and pulse again on M1 mode until you get a mixture that stays together.

4

Divide the mixtures into 6 balls and shape them into patties.

5

Brush a piece of parchment paper with olive oil and place the patties over it.

6

Brush the surface of the patties with olive oil and bake them at 180°C for 15 minutes.

7

Flip the patties and bake them for further 15 minutes.

8

While the patties are baking, make the hemp dill sauce by placing all ingrediens in the blender jug of the food processor.

9

Serve the patties on lettuce leaves by topping them with the sauce, sliced tomatoes and microgreens.
