Wash and dry the pumpkin, potatoes, courgette, pepper und rosemary. Remove the rosemary leaves from the sprigs. |

Peel the onion and slice it into strips. Core the pepper and the pumpkin. Slice the pepper, pumpkin and courgette. |

Wash and dry the lamb. |

When the vegetables are done, set „Grill 1“ to 8 minutes and start the program. When finished, remove the vegetables from the Combi steam oven and transfer them to a bowl. Season with vinegar, caraway seeds, sea salt and black pepper and keep them warm. |

Place the lamb onto the wire rack. Put the wire rack on the enamel shelf. Place the Enamel shelf on the middle rack position of the Combi steam oven. Set „Steam 1“ to 5 minutes and start the program. Afterwards set „Grill 1“ to 4 minutes and press start. If you have a meat thermometer, a temperature of 55 °C means that the lamb is cooked medium rare/medium. According to personal taste, shorten or extend the cooking time. |

Remove from the Combi steam oven and let the lamb rest for 5 minutes. Serve with the roasted vegetables. |
