Directions
A fresh, healthy salad for all occasions from simple work lunch-box to sharing dish at a gathering. The mix of grilled aubergine, mint, garlic and coriander couscous is sure to get your tongue tingling with flavour.

Steps
| 1 | Pre-heat grill 1. | 
| 2 | Cut the aubergine into large chunky pieces and toss them in olive oil. | 
| 3 | Season with salt and pepper and spread them on to the enamel shelf. Place in the higher shelf position and cook on Grill 1 + Steam 1 for 8-10 mins turning 1/2 way. | 
| 4 | Cook the couscous according to the pack instructions. | 
| 5 | Stir the grilled aubergine and mint into the couscous, serve immediately with a crisp green salad and sprinkle with pomegranate seeds if desired. |
