Gluten-free broccoli gnocchi are a tasty, simple pasta dish, perfect for a light, healthy lunch.

Ingredients

200g potatoes
250g broccoli
200g rice flour
salt to taste
200g spinach
50g starch

Steps

Cut the potatoes into small pieces and the broccoli into florets. Boil the vegetables in salted water for 15 minutes, until the potatoes are soft, then drain.

Transfer the well-drained vegetables into a blender and blend them.

Place the mixture into the breadmaker and gradually add the salt and flour, then knead with the Gluten-free Pasta programme (programme 17 SD-YR2550, programme 18 SD-YR2540, programme 13 SD-B2510, programme 16 SD-R2530).

Take out the dough little by little and roll it on the floured surface to create long strands. Then flatten them a little, cut them into squares and add ridges with a fork or a wooden board for gnocchis as in the picture.

Place the gnocchi in a baking dish and cook them in your steam oven for 3 minutes (or steam them in another way). As a sauce we recommend a spinach extract/juice lightly thickened in a saucepan with a little starch or kudzu.
