Directions
This clever wrap-based quiche delivers all the comfort of a classic bake with minimal prep. Using flour wraps as a crisp base and a blended egg and cottage cheese filling, it’s high in protein, quick to assemble and perfect for feeding a crowd.

Steps

Place the spinach in a microwave-safe bowl, cover with a plate and cook on the Microwave function for 2 minutes until just wilted. Allow to cool slightly, squeeze out excess moisture and roughly chop. |

Cut two of the flour wraps in half and arrange them cut-side facing inwards around the edge of the air fryer basket, leaving a gap in the centre. Brush the wraps generously with water to make them tacky, then push the damp wraps together so they seal and stick with no gaps. Brush the remaining whole wrap with water and place it over the gap in the centre, pressing firmly across the base to secure it to the layers underneath, then brush generously with olive oil. |

Place the wire rack onto the glass turntable, set the air fryer basket on top and cook using the Air Fry function at 180°C for 3 minutes until lightly golden and crisp in the centre, then carefully remove. |

Blend the eggs, cottage cheese, double cream, grated cheese, salt and pepper until smooth, then stir through the chopped chives if using. |

Place the air fryer basket with the crisp wrap base into the enamel tray to catch any potential leaks. Pour over the egg mixture, scatter over the chopped spinach, then dot the goat’s cheese evenly over the top. |
