This recipe is an excellent starter, or a tasty main course. Stuffed aubergines come in all forms and fillings: try this version with beef and tomatoes!

2 large aubergines
1 clove of garlic crushed
1 medium onion chopped
200g minced beef
400g tin chopped tomatoes
25g pitted black olives chopped
2 tbsp (10ml) dried oregano
2 tbsp (30ml) tomato puree
75g breadcrumbs
50g parmesan grated
50g almond flakes
2 tbsp of parsley or other fresh herbs

Place the aubergines on the grill tray in the microwave oven in the lower self position. Select the OVEN programme and cook for 20 minutes at 220° or until soft. Then, remove them from the oven and allow them to cool.

Cut the aubergines in half horizontally, leaving the stalks attached. Scoop out the flesh and chop finely.

Place garlic and onion in a casserole dish and cook on the stove for a few minutes. Add beef, tomatoes, aubergine flesh, olives, oregano and tomato puree. Cover it and cook for 20 minutes, mixing occasionally.

Mix 40g of parmesan cheese with the breadcrumbs, then add them to the beef mixture. Put the stuffing inside the aubergines.

Place the grill tray in the lower shelf position in the microwave oven. Place the aubergines on the grill tray and sprinkle them with the remaining parmesan cheese. Select the GRILL 1 programme and cook the aubergines for 5 minutes or until golden.

Garnish with almonds and some fresh herbs. Serve them hot.
