Very tasty cod burger which is a great alternative to meat burgers. Perfect recipe for hot summer days.

For the Burger Buns
450g flour
250ml water
30g sugar
50ml oil
1 tsp yeast
11g salt
For the Topping
1 tbsp maple syrup for brushing
1 tbsp oil
white and black sesame seeds to taste
FOR THE FISH
500g cod fillets
spices to taste
FOR THE SANDWICH
purple cabbage to taste
20g Italian stracchino cheese or other cheese (e.g. mozzarella)
turmeric to taste
oil to taste
salt to taste

Begin by preparing the dough for the buns.
Combine the flour, water, sugar, oil and teaspoon of yeast in the breadmaker, then start the manual kneading programme for 10-15 minutes (if your Panasonic breadmaker model has no manual kneading setting, choose the pizza programme and cancel the programme after it finishes kneading). During the last 5 minutes add the salt and continue to knead until the dough is completely mixed. Meanwhile, preheat the oven to 180°C.

Let the dough rise for about three hours, until it almost doubles. After the first rise, weigh the dough and divide it into five equal parts. Then quickly knead each ball, turning the ends under. Place the newly formed buns on a baking tray covered with baking paper, cover them well with cling film and leave to rise for another 2.5-3 hours. Once the second rise is completed, remove the cling film and mix 1 tablespoon of maple syrup and 1 tablespoon of oil in a bowl.

Brush each bun with the mixture of oil and syrup and sprinkle with white and black sesame seeds. Let the buns rest for another 3-5 minutes, and then bake them in the oven at 180°C for around 12 minutes.

Place the cod fillets flavoured with a mix of spices to your liking on a baking tray and steam them for 10 minutes in the Panasonic Combi Steam Oven.

While the fish is in the oven, prepare the rest of the ingredients for the burger. Cut the purple cabbage and season with oil and salt. Then, blend the stracchino cheese and a teaspoon of turmeric.

Finally, assemble the burger.
