Basil & Walnut Pesto Recipe

You can’t go without a jar of pesto in your fridge. Whether to use it as a dip for veggies, as a spread for toast, as a sauce for patties or as a quick pasta condiment, you will always find it useful to have it! And to be honest, homemade pesto is way better than the one from the store. Our version uses walnuts instead of pine-nuts for a much heartier flavor.

Ingredients

Adjust Servings:
40g basil
60g walnuts
90g extra virgin olive oil
1 tsp lemon juice
salt

Steps

Put basil, walnuts, a pinch of salt, lemon juice and 30g olive oil in the jug of the hand blender.

Start blending on high.

Gradually add the rest of the oil while still blending.

Continue blending until you get an homogeneous sauce.

Store in the fridge in a glass jar, topping it with a little more olive oil in order to preserve it for more days.
