A vibrant mix of Mediterranean vegetables, lightly seasoned and cooked using the Panasonic Air Fry Combination Microwave Oven for maximum flavour in minimal time. Finished with fresh herbs and crumbled feta, this makes an easy, elegant side for roasts or grilled mains.

Ingredients

4 baby marrows sliced
1 red onion cut into wedges
220g baby tomatoes
2 tbsp olive oil
1 tsp dried oregano
salt and pepper
2 tbsp chopped fresh dill
2 tbsp chopped fresh chives
80g feta crumbled

Steps

Place the baby marrows, red onion, red peppers and baby tomatoes into a bowl.

Drizzle over the olive oil, sprinkle with the dried oregano and season with salt and pepper, then toss to coat evenly.

Arrange the vegetables on the air fryer basket.

Place the enamel tray directly onto the glass turntable, position the wire rack on top, then set the air fryer basket on the wire rack.

Select Combination 4 and cook at 220°C + MW 100 for 12 - 15 minutes until the vegetables are tender and lightly roasted.

Remove from the Air Fry Combination Microwave and toss through the chopped dill and chives.

Finish with crumbled feta and serve warm.
