Tender sweet potato rounds cooked slowly in the Panasonic Air Fry Combination Microwave Oven, then finished with a honey glaze and crisped using the air fry function. Finished with crumbled feta and fresh chives, these make a simple yet elegant side dish.

Ingredients

2 large sweet potatoes peeled and sliced into rounds
2 tbsp olive oil
salt and pepper
2 tbsp honey
80g feta crumbled
2 tbsp finely chopped chives

Steps

Place the sweet potato rounds onto the enamel tray, drizzle with the olive oil and season with salt and pepper, then toss to coat evenly.

Place the enamel tray into the Air Fry Combination Microwave Oven on top of the glass turntable. Select Combination 3 and cook at 200°C + MW 300 W for 35–45 minutes until the sweet potatoes are tender.

Drizzle the sweet potatoes with honey and gently toss to coat.

Switch to the Air Fry 2 function (200°C) and cook for 3–5 minutes until lightly golden and caramelised.

Transfer to a serving dish and finish with crumbled feta and chopped chives before serving.
