Steps

In a microwave safe baking dish, layer 250g tomato sauce. |

Top the sauce with 3 lasagne pasta sheets next to each other to cover the whole surface. |

Spread over a third of the ricotta cheese. |

Top the ricotta with a third of the courgette, aubergine, roasted red peppers. |

Top the veggies with 50g grated mozzarella cheese. |

Repeat steps 1-5 two more times to create three layers. |

Place the dish in the Combi microwave. Set to Eco Combi 1 for 20 minutes and then Grill Mode 2 for 15 minutes until the pasta is soft and the cheese on top is golden. |
