Vegan Crunchy Wonton Ravioli Recipe

For the ravioli
200g defrosted frozen peas
100g soaked cashew nuts
2 tbsp olive oil
3 tbsp sautéed yeast flakes
2 tbsp chopped mint
1 tbsp lemon zest
1 clove of garlic
1 pack of wonton sheets
water
salt
pepper
For the sauce
1 bunch of coriander
1 lemon
1/2 chilli
1 clove of garlic
50ml olive oil
50g peas

The evening before: Take the peas and the wonton sheets out of the freezer and leave to defrost. Soak the cashew nuts in water (for at least 8 hours). Ensure that the peas that you buy come in cardboard packaging and not a plastic bag.

The next day, sauté the yeast flakes until golden brown to intensify the flavour. Be careful though as they will burn very quickly. Place the peas, cashew nuts, olive oil, yeast flakes, mint, lemon and garlic into a food processor and blend until a creamy consistency is formed. You may need to thin the mixture with a little bit of water.

Separate the wonton sheets and place one sheet on a flat board. Using a teaspoon, spoon some of the filling into the middle of the wonton sheet and wet the edges with water using a brush or your fingers.

Carefully lay another wonton sheet on top and press down along the edges. Don’t worry, the two sheets will stick together nicely and secure the filling inside.

Lay the prepared ravioli out flat. Ensure that no parts of the edges are still wet otherwise the ravioli will stick together.

Cook the ravioli in boiling water for 4 minutes and then sauté them in a pan with a tiny amount of oil until crispy and golden. Cook the peas according to the instructions on the packaging.

To make the sauce, lay out all the ingredients, peel the garlic and remove the seeds from the chilli.

Place the ingredients into a food processor and blend until they form the consistency of pesto.

Serve! Arrange the ravioli on a plate and garnish with the sauce and the cooked peas. Enjoy!
