Directions
Healthy Asian ravioli made out of wonton dough filled with peas and cashew nuts.

The evening before: Take the peas and the wonton sheets out of the freezer and leave to defrost. Soak the cashew nuts in water (for at least 8 hours). Ensure that the peas that you buy come in cardboard packaging and not a plastic bag. |

The next day, sauté the yeast flakes until golden brown to intensify the flavour. Be careful though as they will burn very quickly. Place the peas, cashew nuts, olive oil, yeast flakes, mint, lemon and garlic into a food processor and blend until a creamy consistency is formed. You may need to thin the mixture with a little bit of water. |

To make the sauce, lay out all the ingredients, peel the garlic and remove the seeds from the chilli. |

Place the ingredients into a food processor and blend until they form the consistency of pesto. |

Serve! Arrange the ravioli on a plate and garnish with the sauce and the cooked peas. Enjoy! |
