Peel the pears using a peeler. Sprinkle with lemon juice. |

Cut the vanilla pod open lengthwise and scrape out the seeds. Divide evenly between the pears. |

Meanwhile, roast the almond flakes in a frying pan without using any fat. Turn regularly until the almonds are golden on both sides. Set aside. |
