Steak with Potato Wedges, Corn
& Lemon Butter

Adjust Servings:
400g potatoes
1 tsp olive oil
1 tsp chilli flakes
1 tsp smoked paprika
2 corn on the cob frozen foods
2 sirloin steaks à ca. 200g
1 tbsp parmesan coarsely grated
80g soft butter
zest of 1/2 lemon
2 sprigs lemon thyme
sea salt
pepper

Thoroughly wash and dry the potatoes. Quarter them lengthwise. Whisk olive oil, chilli flakes and smoked paprika in a bowl, add the potatoes and toss to coat.

Take the water tank out of the combi steam oven, fill it with water and place it back into the oven.

Place the wire rack on the enamel shelf. Spread one third of the wire rack with the potatoe wedges.

Put the enamel shelf into the Combi steam oven (middle position). Set "Steam 1" and 17 minutes and start the program. After 9 minutes, stop the process, open the oven, add the corn to the second third of the wire rack and continue the steaming. After additional 4 minutes, stop again, open the oven, add the steaks to the wire Rack and finish the steaming.

Spread the grated parmesan on the corn, set "Grill 1" to 7 minutes and start the program. If you have a meat thermometer, the steaks are cooked medium when it's 54 °C. According to personal taste, shorten or extend the cooking time.

Mix together the butter and zest of lemon. Wash and dry the sprigs of lemon thyme, pluck the leaves and chop finely. Add to the butter and season to taste with sea salt.

Remove the meat from the Combi steam oven, cover it and let it rest for 10 minutes.

Place one steak, corn and potato wedges onto the plates. Season to taste with sea salt and black pepper and serve with lemon butter.
