A warming, fragrant dal made with red lentils, coconut drink, spices, curry leaves, and chilli. Gently cooked on the Chunky Soup setting for a richly textured, spiced dish with island flavour.

Adjust Servings:
130g red lentils rinsed
500ml water
30g onion chopped
30g tomato chopped
1 tsp minced ginger
2 garlic cloves sliced
1 small green chilli halved
1 sprig curry leaves
½ tsp turmeric powder
½ tsp red chilli powder or cayenne pepper
½ tsp cumin powder
¼ tsp coriander powder
¾ tsp salt
100ml full-fat coconut drink
salt and pepper to taste

Steps

Add red lentils, water, onion, tomato, ginger, garlic, green chilli, curry leaves, turmeric, red chilli powder, cumin, coriander and salt to the jug of the Panasonic Blender & Soup Maker.

Turn the knob to the Chunky Soup setting and press Start (cooks for 30 minutes).

Once the program is complete, open the lid and stir in the coconut drink.

Taste and adjust seasoning with additional salt and pepper if needed.

Serve hot with rice, roti, or on its own as a comforting lentil curry soup.
