250g red lentil flour plus extra lentil flour for dusting
2 eggs
1 tbsp olive oil

Note: The ingredient quantities are not compatible with Mini Breadmaker SD-PN100 - find the recipe suitable for PN100 (Smaller bread size) here

Steps

Remove the baking tin from the machine with a clockwise rotating movement. Insert the dough hook in the tin. Add the lentil flour, eggs and olive oil. Place the baking tin back in the breadmaker and close the lid.

Select programme 21 from the menu and start the device. If the device beeps after two minutes and stops, open the lid and push the dough down with a dough scraper. Close the lid again and press “Start” again.

As soon as the machine beeps again, switch the device off and remove the baking tin. Place the dough on a work surface that has been dusted with lentil flour. Knead until it forms a smooth dough. Wrap in cling film and beat, then leave to rest at room temperature for 1 hour.

Press the dough out flat using your hands and roll out thinly using a pasta machine up to setting 6. Cut using the pasta machine’s spaghetti cutter. Dust with a little lentil flour to prevent the spaghetti from sticking together.

Bring a large pan of water to the boil, add salt and cook the lentil spaghetti for 5 minutes until al dente.
