When you’re craving a little something sweet, how about a cake that you can make in a mug! Lemon peel is also full of nutrients, so why not make it with organic ingredients.

3 tbsp wheat flour
3 tbsp sugar
1 1/4 tbsp baking powder
1/8 tsp salt
2 tbsp vegetable oil
2 tbsp lemon juice
1/2 lemon zest
1 egg
TOPPING:
whipped cream As desired
blueberry As desired
strawberry As desired
mint As desired

Steps

Mix flour, sugar, baking powder and salt together in a mug (size of mug should be no smaller than 300ml).

Add vegetable oil, lemon juice, lemon zest and beaten egg. Stir everything well.

Place the mug in the Microwave Oven. Set the Microwave to 800W for 1 min. Press start.

When it beeps, wait for 20 secs. Set the Microwave to 800W for 1min 30secs and press Start.

After cooking allow to stand for a few minutes and serve warm in the mug with ice-cream, custard, cream, strawberries or sprinkles etc.
