These crispy, flavourful bites combine mashed potatoes, melted mozzarella, and shredded chicken for a deliciously satisfying snack or appetizer. Coated in a sticky barbecue and hot sauce glaze, they offer the perfect balance of savoury, cheesy, and spicy flavours. The cool, tangy blue cheese dipping sauce perfectly complements the gentle heat.

For the Bites:
200g mashed potatoes
100g mozzarella
150g chicken breast cubed and seasoned, cooked, do not overcook
1 egg
20g flour
10g chives chopped
30g barbecue sauce
hot sauce
cooking oil for greasing
For the Blue Cheese Dipping Sauce:
50g blue cheese crumbled
60ml sour cream
30ml mayonnaise
1/2 tsp lemon juice
1/4 tsp garlic powder
salt and pepper to taste

In a large bowl, combine the mashed potatoes, mozzarella, cooked chicken, egg, flour, and chopped chives. Mix until well incorporated.

Take a small portion of the mixture (about 25 g) and shape it into a bite-sized ball. Repeat with the remaining mixture.

Place the party snack plate on the Panasonic Multi-Cooker, adjust the dial so that the party snack plate icon flashes, and press Start. Wait for the party snack plate to preheat.

Using a pastry brush, lightly grease the cavitieswith cooking oil. Carefully place the potato bites into each cavity and cook for about 10 minutes, turning as the balls colour on each side until golden brown.

In a small bowl, mix the barbecue sauce and hot sauce.

Once the bites are golden brown, baste them with the barbecue and hot sauce mixture. Continue cooking for another 3 minutes until the glaze becomes sticky and coats the bites evenly.

For the blue cheese dipping sauce, combine the blue cheese, sour cream, and mayonnaise in a small bowl.

Add the lemon juice and garlic powder, stirring until smooth. Season with salt and pepper to taste. Blend for a smoother consistency if desired.

Serve the bites warm with the chilled blue cheese sauce for dipping.
