Ingredients

Adjust Servings:
1 ripe banana
1 egg
30ml vegetable oil
50g plain flour
½ tsp baking powder
30g caster sugar
½ tsp ground cinnamon + extra for sprinkling
30g dark chocolate chips optional

Steps

1

In a medium bowl, mash the banana thoroughly with a fork. Add the egg and oil and whisk with the same fork to combine.

2

Add the flour, baking powder, sugar and ground cinnamon and stir through with a spatula. Finally fold through the chocolate chips, if using.

3

Place 5 metal or plastic mould into the steaming basking, then place a cupcake liner in each mould. Evenly divide the cupcake mixture between the cupcake liners and finish with a sprinkle of extra cinnamon.

4

Place ½ measuring cup of water into the pan, place the steaming basket in place and close the lid.

5

For model DA152W, press Quick Cook/Steam, then press Start.
For model DA152K, select the Risotto program, confirm it is set to 30 minutes (initial cooking time), and press Start.

6

When the cupcakes are finished, remove the steaming basket from the rice cooker and set aside to cool.

7

Enjoy warm or allow to cool to room temperature and store in an airtight container.

Note: You don’t have to use metal or plastic moulds to make the cupcakes, you can place the cupcake liners directly into the steaming basket, but you won’t get the nice round shape as shown.

Enjoy
