This roasted gammon is cooked gently in the Panasonic Air Fry Combination Microwave Oven using the convection setting to keep the meat juicy, then finished uncovered with a festive glaze for a sticky, golden crust. A classic Christmas centrepiece with minimal effort and maximum flavour.

1.5–2kg gammon joint
olive oil
water cider or apple juice, for the tray
3 tbsp of your favourite jam for glazing (we love a tomato chilli jam!)

Preheat the Panasonic Air Fry Combination Microwave Oven using the Convection function at 180°C. Rinse the gammon under cold water and pat dry.

Line a roasting tray with a large sheet of baking paper or foil, long enough to fully wrap the joint. Lightly rub the gammon all over with olive oil, then place it in the centre of the tray.

Pour a small amount of water, cider or apple juice into the base of the tray, then wrap the paper or foil tightly over the gammon to form a sealed parcel.

Place the enamel tray onto the glass turntable. Place the prepared roasting tray onto the enamel tray and roast using the Convection function at 180°C for 25–30 minutes per 500 g, plus an extra 30 minutes.

Remove and carefully unwrap the foil. Discard the foil. Allow the gammon to cool slightly, then remove any string or netting. Cut away the rind, leaving a thin layer of fat, and score the fat in a diamond pattern.

Place the jam into a mug, then thin to a brushing consistency with a little boiling water.

Brush the gammon generously with your chosen jam glaze, then return the gammon to the Panasonic Air Fry Combination Microwave Oven uncovered. Increase the temperature to 200–220°C and cook for 15–20 minutes until the glaze is bubbling, sticky and deeply golden.

Remove from the microwave and allow the gammon to rest for 15–30 minutes before carving.
