Directions
A hearty one-basket tray bake inspired by the Sicilian pasta alla Norma. Juicy chicken thighs roasted with aubergine, tomatoes, garlic, and basil in the Panasonic Flex Air Fryer NF-BC1000. Finished with a sprinkle of parmesan for a rich Mediterranean family meal.

Remove the divider and the crisper plate from the Flex Air Fryer basket. Add the olive oil, garlic, aubergine, and cherry tomatoes. Season with oregano, salt, and pepper, and toss to coat. |

Place the chicken thighs in between the vegetables. Set the Flex Air Fryer to Roast at 200°C and cook for 20 minutes. |
