Oily and firm white fish cuts are grilled with salt and pepper, then basted in sizzling butter as they finish cooking. A drizzle of olive oil and lemon juice completes this fresh, flavour-packed seafood dish.

Adjust Servings:
2 small mackerel halved or 4 mackerel fillets
2 skin-on hake or yellowtail fillets
salt and pepper to taste
1 tbsp olive oil
1 tbsp unsalted butter
lemon wedges to serve

Pat the fish dry with a paper towel and season both sides generously with salt and pepper. Brush lightly with olive oil.

Place the grill plate on the Panasonic Multicooker, click the Barbecue icon, and press Start to preheat.

Once hot, place the mackerel and hake or yellowtail fillets skin-side down on the grill. Cook for 5-6 minutes, then flip the fish.

Add the butter directly to the grill plate and let it melt. As the fish finishes cooking, use a spoon to baste the fillets with the melted butter for added flavour and moisture. Cook for another 4-5 minutes or until the fish is cooked through.

Transfer to a serving platter. Drizzle with extra olive oil and squeeze over fresh lemon juice. Serve immediately with lemon wedges on the side.
