Soon to be a once-a-week dish, chicken in a red wine sauce is a classic French recipe made easy in the Combi Steam Oven.

Ingredients

Adjust Servings:
100g streaky bacon
5ml mixed herbs
1 clove garlic crushed
4 chicken portions approx. 1.2kg in weight, skin removed
salt
pepper
100g button mushrooms
300g whole shallots
30ml brandy
275ml red wine
150ml chicken stock
cornflour to thicken
parsley chopped

Steps

Place bacon, herbs and garlic in casserole. Place on base of oven and cook on 1000 W for 2 minutes.

Place remaining ingredients in casserole dish and cover. Place on base of the oven and cook on Combi 11 for 1 hour 30 minutes or until cooked through.

Skim off any excess fat. Thicken the sauce by using a little cornflour mixed with water. Serve sprinkled with chopped parsley.
