A creamy, wholesome nut drink made from soaked cashews and slivered almonds, lightly enriched with coconut oil and a pinch of salt. Perfect for coffees, cereals or drinking as is.

½ cup raw cashews soaked overnight
½ cup slivered almonds soaked overnight
1 tbsp coconut oil
½ tsp salt
¼ tsp vanilla extract optional
water to cover (approx. 800-900ml)

Steps

Drain the soaked cashews and almonds. Add them to the jug of the Panasonic Blender & Soup Maker along with the coconut oil, salt, and vanilla if using. Add water to just under the 1-litre mark.

Turn the knob to the Nut Milk setting and press Start.

Once blending is complete, strain through a nut milk bag or fine sieve if a smoother texture is desired.

Store in the fridge for up to three days. Shake well before using.
