Baked Beans with Spring Onion, Egg and Radishes Recipe

For 2 portions:
1 stalk of spring onion
1 can of baked beans about 410g
1 pinch of salt
1 pinch of pepper
1 pinch of chilli flakes
2 medium-sized eggs
5 radishes
2 stems of parsley
4 slices of whole wheat bread

Steps

Wash spring onion, dry and cut into fine rings. Add the baked beans and spring onion to a baking dish and season with salt, pepper and chilli flakes. Then cook for 4 ½ minutes in your Combi Microwave Oven at 800 watts.

Remove baked beans from the microwave, beat eggs and add to the dish. Put it back in the microwave and cook for 3 minutes at 800 watts.

Wash radishes, shake dry, gently separate the green parts and cut the rest into thin slices. Wash parsley, shake dry and peel off tips.

Remove baked beans from the microwave. Garnish with radish slices and parsley and serve with bread.

Tip: Instead of the chili flakes, you can also use curry powder and give the dish an oriental flavour.
