Adjust Servings:
30ml ketchup
30ml vinegar
15ml soy sauce
410g tinned jackfruit drained
425g tinned black beans drained
15ml lime juice
8 wholemeal wraps
10ml oil
2 avocados peeled, cored and roughly chopped
90ml dairy free yoghurt
75g vegan cheese grated

Mix the ketchup, vinegar, soy sauce and jackfruit in a bowl. Cook on High Microwave Power for 10 minutes. Meanwhile, in another bowl mix the black beans with the lime juice.

Preheat on Convection 180 °C. For the nachos, cut the wraps into 8 triangles each. Brush the triangles on both sides with oil, then cook half in the oven on the enamel tray in the middle shelf position on Convection 180 °C for 10-15 minutes. Repeat with the second half.

To serve, scatter the nachos over a large platter. Top with spoonful's of the cooked jackfruit and black bean salsa. Finish with the avocado, yoghurt and cheese.
