Mix the ketchup, vinegar, soy sauce and jackfruit in a bowl. Cook on High Microwave Power for 10 minutes. Meanwhile, in another bowl mix the black beans with the lime juice. |

To serve, scatter the nachos over a large platter. Top with spoonful's of the cooked jackfruit and black bean salsa. Finish with the avocado, yoghurt and cheese. |
