Spelt pizza with homemade sauce and a topping of kohlrabi, goat cheese, pistachio nuts and corn salad

I really like pizza, but not that sticky, unhealthy version from the supermarket freezer… When I eat pizza I prefer it to be fresh and homemade, from dough to the sauce, and packed with tasty and fresh ingredients. To make this pizza a bit healthier, I replaced the normal flower with spelt flour.

Place all of the ingredients for the dough, except for the yeast, in the bread maker tin with the normal kneading hook. Add the yeast in the appropriate container in the lid. Set the machine to menu 28 and press start.

If you do not have a bread maker you can find the recipe here to make dough by hand, but replace the normal flower with spelt flour.

Now for the sauce. Put some olive oil in a small frying pan and add the onion. Fry until transparent. Add the garlic, tomato cubes and oregano. Leave it to simmer for 5-10 minutes on a medium heat. Once it has thickened somewhat, add a dash of balsamic vinegar and season to taste with salt and pepper. Allow it to simmer for another 5 minutes, then taste the sauce. Place in a food processor (or other kitchen appliance) and blend until smooth. Set aside to cool.

Meanwhile, prepare the toppings. Cut the kohlrabi into thin slices of about 3mm with a mandolin, food processor or by hand. It is important that the slices are thin, otherwise they will not cook properly in the oven.

Once the bread maker is finished you can get started! Divide the dough into four parts (cover the pieces well that you do not into use, otherwise they will dry out). Dust your working surface with some flour and shape the pizza base with your hands, into a circle, square or rectangular, as preferred.

I cook my pizza on the special panacrunch pan from Panasonic, and I use a combination of microwave and grill mode simultaneously. Cut a piece of parchment paper to the size of the panacrunch pan and place your pizza base on it. In the meantime, heat the panacrunch pan in the microwave at the highest setting for a maximum of 3 minutes.

Cover the pizza with 2 tbsp pizza sauce, spread thinly over the entire bottom. (do not put too much sauce on your pizza, otherwise it will not cook properly!) Now divide a handful of the grated cheese over the pizza. This is followed by a couple of slices of kohlrabi, a handful of pistachio nuts and bacon and topped off with a couple of cubes of soft goat's cheese. Make sure that you do not overfill the pizza and that everything is well distributed.

Slide the pizza with baking paper and all on the panacrunch pan and put it in the oven. Select grill setting 1 and microwave mode 440w. Bake 7 minutes in the centre of the oven. Then move the pizza to the top of the oven and bake it with the same setting for another 2 minutes for a nice, crispy crust.

Slice and enjoy!

1 tsp yeast

1 can tomato cubes

1 large or 2 small kohlrabi
150g young 35+ cheese
200g soft goat's cheese
50g unroasted pistachio nuts
100g smoked bacon
50g corn salad
olive oil
