Roasted carrot humus with fresh bread

Delicious roasted carrots with spices, blended in humus on freshly baked bread; the ideal lunch for King’s Day!




Put all the ingredients for the bread (except the yeast) in a baking tin with the kneading hook attached. Set the bread maker to menu 2, size XL, dark crust and press start. The bread will be ready after 2 hours, then allow it to cool.


Meanwhile, make the carrot humus. Peel the carrot and dice it into 0.5 cm slices. Place in a baking dish with garlic cloves (with peel), spices, pepper and salt and some olive oil.


Put on the bottom of the combi steam oven and grill for 25 minutes on grill 3, microwave oven at 440 watt. Allow the carrots to cool down completely. Remove the peel from the garlic.


Put the roasted carrots and garlic together with the drained chickpeas, the tahini, lemon juice, some pepper and salt and a generous splash of olive oil in the food processor. Blend until smooth. Add extra olive oil if the humus is too dry.


Cut a large slice of the freshly baked bread and spread with the carrot humus. Crumble some feta over it and garnish with basil cress. Bon appetite!

350g spelt flour
250g white bread flour
355ml water
10g salt
18g butter
7 g yeast dried
For the carrot hummus
500g carrots
3 cloves garlic
1 tsp cumin powder
1 tsp coriander powder
1 tsp smoked paprika
1 can (400g) chickpeas drained
olive oil
to taste salt & pepper
1 tbsp tahini
of 1 lemon
10g feta optional
a few shoots of basil cress optional
