Gluten-free Protein Bread with Goji Berries


  • For the dough:

  • For the topping:




Soak the goji berries in water for around 5 minutes and then drain them well.


Take the bread pan with the kneading blade out of the breadmaker and add in all the ingredients except for the topping.


Place the bread pan back into the breadmaker, close the lid, select menu 1 and press start.


After around 10 - 15 min of mixing, press stop and add the topping.


Select menu 13, press start and bake the bread for around 1 h 30 min.

450g low-fat curd or quark
7 eggs size L, approx. 480g
75g seed and kernel mixture
150g ground flaxseeds
75g soaked goji berries
150g ground almonds
75g oat bran
45g corn flour
2 tsp salt
21g baking powder
For the topping:
20g seed and kernel mixture
