This fresh lemon cake is super easy to make and also gluten-free, so you can enjoy it even if you have celiac disease or a gluten allergy!

Steps

Mix the oil, eggs and zest and juice of the lemon in a measuring cup.

Put it in the baking tin where the kneading hook is already.

Then add the cane sugar, rice flour, almond flour and cream of tartar (in that order).

Put the baking tin in the bread baking machine and set to menu 20, press start.

After 2 minutes, the machine beeps, scrape the sides of the baking tin with a silicone spatula and press start.

After 10 minutes, the machine beeps again, press start again.

Allow the cake to cool completely on a grid.

Make a glaze with the icing sugar and lemon juice and pour over the cake. Then sprinkle the lemon zest over it.

160g cane sugar
160g rice flour
80g almond flour
10g cream of tartar

100g icing sugar
Zest 1 el + juice of 1/2 lemon
