The cosiest time of year calls for delicious home-made meals featuring seasonal ingredients. So what comes to mind when you think of autumn? Pumpkin! They are more than just jack o’ lanterns at Halloween, they make for a healthy ingredient in any number of meals – from savoury to sweet.
Pumpkin is rich in beta-carotene, which is good for your eyesight, and is low in calories. It is a source of vitamin C and has a high antioxidant level – both of which help boost your immune system.
