Recipe for making a sourdough bread with the help of our Panasonic bread makers.

Ingredients

80g sourdough starter (rye) (prepared 2 hours in advance)
50g rye flour
350g strong wheat flour
10g salt
280ml water

Steps

Take the bread baking pan out of the bread maker and insert the dough hook. Then add the ingredients in the order shown.

Place the baking pan back into the breadmaker and close the lid. Then select and start the programme for sourdough (SD-YR2550 programme 22, SD-YR2540 programme 23, SD-R2530 programme 21).

At the end of the programme, take the dough out of the bread maker and place on a well-floured work surface. Fold once in the middle from all sides and place with the seam side up in a well-floured proofing basket lined with a kitchen towel. Cover with another kitchen towel and let it rest for about 30 minutes.

In the meantime, heat the oven to 280 °C and heat a cast iron saucepan with a lid for about 25 minutes.

After the rise time, slowly tip the bread dough onto a piece of baking paper, carefully scratch a cross or any other pattern on the surface with a sharp knife (or a razor blade) and heave this (including baking paper) into the pan. Place the lid on top and bake for about 25 minutes.

Then reduce the temperature to 200 °C and bake for another 25 minutes.

At the end of the baking time, take the pan out of the oven and take the bread out for cooling.
